I have a question. I have items from the UP and SP on my layout, but maybe their can be some items from other railroads come here to. Is their a map with all the railroadlines and wich company has that track.

Depending on what time period you favor, that map could be quite complicated. I have never seen one that would show every RR, all at once.

You certainly will see many foreign RR cars, running over UP and SP tracks every day. It depended upon how a shipper chose to route their car. Once good resource, is to simply study photographs.

The "map" with all the railroads for a given time period was the Official Guide, a book issued several times a year with the routes of all the railroads in US. But not all on one map. Coverage of each railroad, one at a time, and many of them had maps. Others do not have maps but a written list of stations and places on different routes.

I model the middle 1950s and have a 1958 Official Guide as a reference. I don't know if these are still published, probably don't have the same kind of information since the industry has changed so much.

I look for a map or document with the railroads from the 80's to now. Has the Union Pacific maked a map with their routes?

It is still published. But not nearly as valuable. Much diminished. They've changed format a couple of times since the 1950's.

This may not be what you're looking for but I have a copy of a wall map of all the current US railroads here (at work) and at home. See the PDF below, I have the unlaminated wall map and I love it.

Here is a link that I have found has good history maps. There were indented text listings on his previous website, but I have not found them. I have copies of the text listing if you want one emailed.

got a great book with all kinds of RR maps. It's Bill Yenne Atlas of North American Railroads

176 pages of maps from ACY to W&LE. Some maps from 1853 (B&O), to 2004(CN). $34.95US from MBI.

What you may need is a copy of the Official Guide or an ORER to determine in what cities the UP or SP or anyone else would interchange with each other. Then you can add other connecting roads like ATSF or BN. a lot depends on what era & what location in the west you are trying to model. For lare RR's like UP-SP, that could be about anywhere west of Chicago!
