    A few days ago I passed a large bakery that had two large tanks on one side. What would they be used for? Vegetable oil and/or corn syrup? I have a space on the N-scale granger railroad layout I'm building and a bakery would fit in nicely with the agricultural theme.

    Anyone guesstimate the approximate dimensions of the tanks? They tower above the one-story bakery plant.

    My main interest in operations is switching; a bakery would provide opportunities for tank cars and covered hoppers and perhaps box cars and reefers.

    I used to work for a production bakery--we had flour delivered via truck, and pneumatically piped it into the storage tank. It was then fed by air again, to the mixing area, dispensed thru a chute/pipe system, electronically actuated for precise and consistent amounts. My best guess is that tank or tanks are for flour. IIRC, our tank held about 90,000 pounds of flour. It has been 8 years since I have seen it, so I cannot approximate the size, but it was about 25-35' tall, several feet in diameter.
