FYI. Bachmann is advertising a sound value line and DCC ready line with 8 pin NMRA socket.
There might be a few here modeling that era.

Wonder where Bachmann got the 1880s steam loco sounds - is there an operating one from that era still running?

SoundTraxx has the sounds. Not Bachmann.
4-4-0's still exist and a couple are running om tourist railroads. Now exactly which one is a good question.
I would not be surprised if some computer generated sounds are used.
I guess it all depends on how many rivets you count.
There are many, many movies and videos existing of these small locos

Maybe from the Promontory, Utah, re-creation?

But it's still Soundtraxx in a Bachmann. And being in those they are usually the low end Soundtraxx. Besides not many of us know the difference in sounds from early & late steam locos.

Sounds can be pulled from different sources. Tapes, old movies, actual recordings made recently.
The decoder company will have an extensive library. With computer software, they can put a pretty good section of sounds in the decoder.

No air pump if Bachmann does the loco for that era.
You would not even have coupler crank. Link and pin couplers where used then.
No idea about whistles though. I am sure a few rivet counters will be picky.
Bachmann does have stripped down decoders on their sound locos.

Speaking of sound in an old 4-4-0, I made progress on my Bachmann Oldtimer tonight. I've completed the installation of the Tsunami micro decoder and here you can see how it all fits. The NWSL motor provided a bit more room for all the components. The speaker is flat and round and I made a new tender deck to accommodate it. It sounds great and the decoder and motor upgrade makes this old dog of a Bachmann run like a Spectrum. I've added eight wheel tender pickup and she crawls forewards and backwards over all my turnouts without a hiccup. I also added a headlight. I have many more details to add to the locomotive. I'm modeling her in her last year of service and she really shows her age. I used a prototype photo to keep my layout as accurate as I can.
