I bought a 12VDC/10A DPDT Plug-in Relay from RadioShack, but all I got was the socket so far. I want to start wiring for it now because I can just plug in the relay later when it gets here.

The problem is that I don’t know which of the coil terminals 7 or 8 is positive OR does that even matter? Is there a polarity concern for a relay that's rated for 12VDC?

No, that type of relay does not have polarity.

    ThanksRobert,
That's probably why I can't find anything on it, but it makes sense because its only a electro magnet pulling the contacts down.
