The question of manual vs. magnetic uncoupling comes up every so often and I've read several of those threads. I'm not trying to restart that discussion. I've got a question for manual pick users. I've got a number of covered spots where there is no overhead access to use a pick in the final spot. I need something like the delayed uncoupling feature of magnets. How do you handle that scenario?

You can still use the delayed uncoupling feature. I believe the primary objection to the delayed feature is unwanted couplings especially on the mains. Any jerkiness there may cause an unwanted uncoupling. But on a siding especially one with cover the delayed feature may be your best bet.

I simply used bamboo skewers for uncoupling cars

Another alternative might be to uncouple the car in question and push the car with the couplers "open" into the hard to reach spur.

This would be my first option.
