Hello all, My outside loop is about 3x6, can anyone help out with which Unitrack track pack I should buy to make something interesting on the inside. No hills or bridges.. Can anyone familiar with Unitrack suggest what I need to buy, there is no local hobby shop that can help.

Sorry I don't have experience with Unitrack, so my observations are kind of generic. I would removed one straight track section from each end so that long straightaways along the sides are not so close to the table edge. This would allow your track to run through a scene rather than right at the edge of it. Also would allow you to place a passenger depot on outside (if you do passenger) where it would leave plenty of space for passing siding, runaround track, yard spurs etc on the inside of the existing loop.

I would agree with what Ken suggests. Also, I would try to have at least one of the two long edges make a gentle inward curve. So not all are parallel to the layout sides.

If it was me, I would not opt for a Unitrack set, but instead buy individual parts. IMO, track sets are too restrictive, and result in compromises that produce less-interesting layouts, and/or leftover parts.

I'm assuming you're interested in just running laps as opposed to switching ops, so I tossed together a twice-around plan with some sidings to store cars. I also had to guess at the curve parts you already have based on the photos. If nothing else, it might inspire new ideas.

That looks great, do I need another Kato power supply, I would like the option to run 2 trains at the same time...

Please note that, although appearance may suggest otherwise, the plan does not allow for two trains to run simultaneously. It is not two separate loops, but instead one loop that wraps around the layout twice.
