Thank you for a most pleasurable article. I also have ridden the Northeast Corridor route you describe. However south of Washington, my route for the past 30+ years has been the Crescent to New Orleans. By the way, I agree with your perception of Flexible Dining. Fortunately, the majority of my trips included kitchen prepared meals in a diner environment.
