JCater is carving stone walls from Foamboard. (http://www.trainboard.com/grapevine/showthread.php?t=95472) He is working in 0 scale, but this method applies to all scales. This thread has pictures and an is an excellent tutorial on how to make stone structures and retaining walls using this method. O Scale.
